Turkey Stir-Fry with Brown Rice and Vegetables

Ingredients

  • 350 g turkey breast, in strips
  • 1 1/2 cups cooked brown rice
  • Bell pepper
  • Carrot
  • Courgette (zucchini)
  • Broccoli
  • 1 tablespoon oil
  • Garlic and ginger
  • Low-sodium soy sauce, optional

Preparation

  1. Heat the oil in a large pan or wok.
  2. Cook the turkey strips thoroughly, until no longer pink inside, then remove them temporarily.
  3. Cook the bell pepper, carrot, courgette and broccoli until tender-crisp.
  4. Return the turkey to the pan.
  5. Add the garlic, ginger and optional soy sauce.
  6. Serve over brown rice.
