Pear and Oat Crumble Cups

Ingredients

  • 3 ripe pears, diced
  • 3/4 cup rolled oats
  • 2 tablespoons chopped almonds or seeds
  • 1 tablespoon olive oil or another suitable unsaturated oil
  • 1 teaspoon ground cinnamon
  • 2 tablespoons water
  • 1 teaspoon lemon juice

Preparation

  1. Heat the oven to approximately 180°C / 350°F.
  2. Mix the pears with lemon juice, half the cinnamon and water.
  3. Divide the fruit between four small oven-safe dishes.
  4. Mix the oats, almonds or seeds, oil and remaining cinnamon.
  5. Place the oat mixture over the pears.
  6. Bake until the fruit is tender and the topping is lightly golden, approximately 25 minutes.
  7. Allow it to cool slightly before serving.

Optional substitution: Use apples, peaches or a mixture of fruit.
