Baked Peaches with Ricotta and Walnuts

Ingredients

  • 2 ripe peaches, halved and pitted
  • 1/2 cup ricotta
  • 1 tablespoon chopped walnuts
  • Ground cinnamon
  • 1 teaspoon lemon juice
  • Fresh mint for serving, optional

Preparation

  1. Heat the oven to approximately 190°C / 375°F.
  2. Place the peach halves cut-side up in a baking dish.
  3. Add a small amount of lemon juice and cinnamon.
  4. Bake until warm and tender, approximately 15 minutes.
  5. Divide the ricotta between the peach halves.
  6. Add the walnuts.
  7. Finish with optional mint and serve.

Optional substitution: Use plain yogurt or an appropriate plant-based alternative instead of ricotta.
