Small muffins made with ripe banana, oats and unsweetened cocoa — naturally sweetened without added sugar.

Banana, Cocoa and Oat Muffins

Ingredients

  • 2 ripe bananas
  • 1 egg
  • 1 cup rolled oats
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons unsweetened milk
  • 1 teaspoon oil for the muffin cups when necessary

Preparation

  1. Heat the oven to approximately 180°C / 350°F.
  2. Mash the bananas in a bowl.
  3. Mix in the egg and milk.
  4. Add the oats, cocoa, baking powder and cinnamon.
  5. Divide the mixture between six lightly greased small muffin cups.
  6. Bake until set, approximately 18–20 minutes.
  7. Allow the muffins to cool briefly before serving.

Optional substitution: Use a fortified plant-based milk and an appropriate egg substitute.
