Baked Apples with Oats and Cinnamon

Ingredients

  • 2 medium apples
  • 1/3 cup rolled oats
  • 1 tablespoon chopped walnuts
  • 1 teaspoon chia seeds, optional
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons water
  • 1 teaspoon oil for the baking dish when necessary
  • 2 tablespoons plain unsweetened yogurt for serving, optional

Preparation

  1. Heat the oven to approximately 180°C / 350°F.
  2. Cut the apples in half and carefully remove the cores.
  3. Mix the oats, walnuts, chia and cinnamon.
  4. Place the apple halves in a lightly greased baking dish.
  5. Fill the centres with the oat mixture.
  6. Add the water to the bottom of the dish.
  7. Bake until the apples are tender, approximately 25 minutes.
  8. Serve warm with optional plain yogurt.

Optional substitution: Replace walnuts with pumpkin or sunflower seeds.
