Banana and Oat Pancakes

Ingredients

  • 1 small ripe banana
  • 1 egg
  • 1/3 cup rolled oats
  • Cinnamon
  • 1 teaspoon oil for the pan, when necessary
  • 2 tablespoons plain yogurt for serving, optional

Preparation

  1. Mash the banana.
  2. Mix it with the egg, oats and cinnamon.
  3. Cook small pancakes in a lightly greased non-stick pan.
  4. Serve with plain yogurt or fresh fruit.

Optional substitution: Use an appropriate egg substitute when necessary.

Why it fits: Uses fruit for sweetness and combines oats with an egg or alternative protein source.

Allergen note: Contains egg and may contain dairy when yogurt is used. Note that banana naturally contains sugar, so this recipe is not sugar-free.
