Whole-Wheat Pasta with Tomato, Spinach and White Beans

Ingredients

  • 140 g dry whole-wheat pasta
  • 1 cup cooked white beans, rinsed
  • 1 can chopped tomatoes
  • 2 cups spinach
  • 1/2 onion, chopped
  • 1 garlic clove, finely chopped
  • 1 teaspoon olive oil
  • Herbs and black pepper

Preparation

  1. Cook the pasta according to its package instructions.
  2. Soften the onion and garlic in olive oil.
  3. Add the tomatoes and beans.
  4. Simmer briefly.
  5. Add the spinach until wilted.
  6. Combine with the drained pasta.
  7. Finish with herbs and pepper.

Optional substitution: Use another whole-grain pasta or an appropriate gluten-free alternative.
