Bell Peppers Stuffed with Brown Rice and Beans

Ingredients

  • 2 large bell peppers, halved
  • 1 cup cooked brown rice
  • 1 cup cooked beans or lentils
  • 1 tomato, chopped
  • 1/2 onion, chopped
  • Herbs and black pepper
  • 1 teaspoon olive oil
  • A small amount of grated cheese, optional

Preparation

  1. Heat the oven.
  2. Soften the onion in olive oil.
  3. Mix the onion with rice, beans, tomato and herbs.
  4. Fill the pepper halves.
  5. Bake until the peppers are tender.
  6. Add the optional cheese near the end.

Optional substitution: Use quinoa instead of brown rice.
