Ingredients

  • 1 whole-grain wrap
  • 2 eggs
  • 1 handful spinach
  • 1 small tomato, chopped
  • 1 teaspoon olive oil
  • Herbs and black pepper, to taste

Preparation

  1. Heat the oil in a pan and cook the spinach and tomato briefly, until the spinach wilts.
  2. Add the beaten eggs.
  3. Cook, stirring gently, until the eggs are fully set.
  4. Season with herbs and pepper.
  5. Place the mixture in the wrap, fold and serve.

Optional substitution: Use seasoned tofu instead of eggs.
