White Bean, Tuna and Vegetable Salad

Ingredients

  • 1 cup cooked white beans, rinsed
  • Approximately 120 g canned tuna, drained
  • 1/2 cucumber, chopped
  • 1 small tomato, chopped
  • 1/2 bell pepper, chopped
  • Fresh parsley
  • Juice of 1/2 lemon
  • 1 tablespoon olive oil
  • Black pepper

Preparation

  1. Combine the beans, tuna and vegetables.
  2. Add parsley, lemon, olive oil and pepper.
  3. Mix gently.
  4. Serve immediately or chill briefly.

Optional substitution: Replace tuna with mashed chickpeas or firm tofu.
